There are several delicious pistachio sweets you can prepare. Here's a recipe for pistachio baklava, a popular Middle Eastern dessert:

Ingredients:

1 package of phyllo dough (16 oz)
1 cup unsalted pistachios, finely chopped
1 cup unsalted butter, melted
1 cup granulated sugar
1 cup water
1 tablespoon lemon juice
1 teaspoon rose water (optional)
1/2 teaspoon ground cinnamon
Instructions:

Preheat your oven to 350°F (175°C).

Thaw the phyllo dough according to the package instructions, but keep it covered with a damp cloth to prevent it from drying out.

In a bowl, combine the chopped pistachios and ground cinnamon. Set aside.

Brush a 9x13-inch baking dish with melted butter to prevent the baklava from sticking.

Take a sheet of phyllo dough and place it in the baking dish. Brush it with melted butter. Repeat this process, layering the phyllo sheets and brushing each layer with butter, until you have used half of the phyllo dough.

Sprinkle half of the pistachio mixture evenly over the phyllo layers.

Continue layering the remaining phyllo sheets, brushing each layer with butter, and then sprinkle the remaining pistachio mixture on top.

Cut the baklava into diamond or square shapes using a sharp knife. Be careful not to press down too hard on the layers.

Bake the baklava in the preheated oven for about 40-45 minutes, or until it turns golden brown and crispy.

While the baklava is baking, prepare the syrup. In a saucepan, combine the granulated sugar, water, lemon juice, and rose water (if using). Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes until the syrup thickens slightly.

Remove the baklava from the oven and immediately pour the hot syrup evenly over the top. Allow the baklava to cool completely and absorb the syrup before serving. This may take a few hours or even overnight.
